- 1 medium Onion(finely chopped)
- 2 medium Carrots(diced)
- 2 medium Celery stalks(diced)
- 2 medium Potatoes(peeled and diced)
- 150 g Green beans(trimmed and cut into 1-inch pieces)
- 100 g Peas(fresh or frozen)
- 1 medium Zucchini(diced)
- 150 g Asparagus(trimmed and cut into 1-inch pieces)
- 1.5 liters Vegetable broth
- 0.5 cup Dill(fresh, chopped)
- 0.25 cup Parsley(fresh, chopped)
- 2 tbsp Lemon juice(or to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- Sour cream or yogurt(for serving (optional))

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened, about 5 minutes.
