- 2 tbsp Vegetable oil
- 1.5 L Vegetable stock or water
- 100 ml Borș (fermented wheat bran liquid)(or lemon juice to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 2 tbsp Fresh parsley or lovage(chopped, for garnish)
- Sour cream(optional, for serving)

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes until softened.

Add the sliced leeks and diced bell pepper to the pot. Cook for another 5 minutes, stirring occasionally, until the leeks begin to soften.

Add the diced potatoes and pour in the vegetable stock or water. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the potatoes and leeks are tender.
