Saint Lucian Lentil Soup

- 1 cup Brown or green lentils(rinsed)
- 1 tbsp Vegetable oil
- 1 medium Onion(diced)
- 3 cloves Garlic cloves(minced)
- 2 medium Carrots(diced)
- 2 medium Potatoes(peeled and diced)
- 1 can (14.5 oz) Tomatoes(diced, undrained)
- 4 cups Water or vegetable broth
- 2 sprigs Thyme sprigs
- 1 leaf Bay leaf
- 1 tsp Salt(to taste)
- 0.5 tsp Black pepper(freshly ground)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the rinsed lentils, diced carrots, diced potatoes, diced tomatoes (with their juice), water or broth, thyme sprigs, and bay leaf to the pot. Stir to combine.

Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes, or until the lentils and vegetables are tender. Stir occasionally.

Remove and discard the thyme sprigs and bay leaf. Season the soup with salt and black pepper to taste.
