🧂 Ingredients
- 200 g Dried fish or smoked meat(e.g., cod, mackerel, or smoked chicken, rehydrated if dried)
- 6 large Eggs
- 2 medium Onions(chopped)
- 4 cloves Garlic(minced)
- 3 medium Tomatoes(diced)
- 200 g Okra(sliced)
- 200 g Spinach(fresh, washed and roughly chopped)
- 3 tbsp Palm oil
- 200 ml Water
- to taste Salt
- 1-2 Chili peppers(optional, to taste)
👨🍳 Instructions
- 1
If using dried fish, soak it in water overnight to rehydrate and remove excess salt. Drain and flake into bite-sized pieces. If using smoked meat, ensure it's cut into manageable pieces.
- 2
Heat the palm oil in a large pot or Dutch oven over medium heat. Add the chopped onions and sauté until softened and translucent, about 5-7 minutes.
- 3
Add the minced garlic and cook for another minute until fragrant. Then, add the diced tomatoes and cook for about 5 minutes until they start to break down.
- 4
Add the rehydrated fish or smoked meat to the pot, along with the sliced okra. Stir to combine.
- 5
Pour in the water, season with salt and optional chili peppers. Bring to a simmer, then reduce heat, cover, and cook for 20 minutes, allowing the flavors to meld.
- 6
Stir in the chopped spinach and cook for another 5-7 minutes until wilted.
- 7
Make small wells in the stew and crack an egg into each well. Cover the pot and cook gently for 5-8 minutes, or until the egg whites are set and the yolks are cooked to your desired consistency.
- 8
Serve hot, traditionally with rice or funge (a cassava-based side).
💡 Pro Tips
