- 500 g Chicken Thighs(boneless, skinless, cut into chunks)
- 3 medium Unripe Bananas (Banane Marrons)(peeled and cut into 1-inch pieces)
- 400 ml Coconut Milk(full fat)
- 1 medium Onion(chopped)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 2 tbsp Curry Powder
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 2 tbsp Vegetable Oil
- to taste Salt
- to taste Black Pepper(freshly ground)
- for garnish Fresh Coriander

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sautรฉ until softened, about 5-7 minutes.

Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in the curry powder, turmeric powder, and coriander powder. Cook for 1-2 minutes, stirring constantly, until spices are fragrant.

Add the chicken pieces to the pot and brown them on all sides.

Add the unripe banana pieces and stir to coat them with the spice mixture.

Pour in the coconut milk and bring to a simmer. Season with salt and pepper to taste.
