Solomon Islands Yam and Chicken Stew

- 1 kg Chicken(cut into serving pieces)
- 1 kg Yams(peeled and cut into large chunks)
- 2 medium Onions(chopped)
- 4 cloves Garlic(minced)
- 1 tablespoon Ginger(grated)
- 2 tablespoons Curry powder
- 1 teaspoon Turmeric powder
- 1 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper(freshly ground, or to taste)
- 6 cups Water or chicken broth
- 2 tablespoons Cooking oil
- 200 g Taro leaves or spinach(chopped (optional))

Prepare the curry paste: In a small bowl, combine curry powder, turmeric, and a little water to form a paste. Set aside.

Heat cooking oil in a large pot or Dutch oven over medium heat. Add chopped onions and sautรฉ until softened, about 5-7 minutes.

Add minced garlic and grated ginger, and cook for another minute until fragrant.

Add the chicken pieces to the pot and brown them on all sides, about 8-10 minutes. Drain off any excess fat if necessary.

Stir in the prepared curry paste and cook for 1-2 minutes, stirring constantly, until fragrant.

Add the chopped yams, salt, and pepper to the pot. Pour in the water or chicken broth, ensuring the chicken and yams are mostly submerged.

Bring the stew to a boil, then reduce heat to low, cover, and simmer for 1 to 1.5 hours, or until the chicken is tender and the yams are cooked through and soft. Stir occasionally.
