Syrian Lentil and Spinach Stew

- 1.5 cups Brown lentils(rinsed and picked over)
- 2 tbsp Olive oil
- 1 large Yellow onion(diced)
- 4 cloves Garlic(minced)
- 2 medium Carrots(peeled and diced)
- 2 medium Potatoes(peeled and cut into bite-sized pieces)
- 6 cups Vegetable broth
- 5 cups Fresh spinach(roughly chopped)
- 1 tsp Cumin
- 0.5 tsp Coriander
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 0.5 cup Lemon juice(freshly squeezed)

Heat olive oil in a large pot over medium heat. Add the diced onion and sautรฉ until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Add the rinsed brown lentils, diced carrots, and diced potatoes to the pot. Stir to combine.

Pour in the vegetable broth. Add cumin, coriander, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils and vegetables are tender.

Stir in the chopped fresh spinach and cook for another 3-5 minutes, until the spinach has wilted.

Remove the pot from the heat and stir in the fresh lemon juice. Taste and adjust seasoning with salt and pepper if needed.
