Tanzanian Beef and Potato Stew
A hearty and flavorful beef stew with potatoes, simmered in a rich broth infused with aromatic spices. This dish is a comforting staple in Tanzanian cuisine, often served with ugali or rice.

- 1 kg Beef stew meat(cut into 1-inch cubes)
- 3 tbsp Vegetable oil
- 2 large Onions(finely chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 medium Potatoes(peeled and cut into 1.5-inch chunks)
- 3 medium Carrots(peeled and sliced into 1-inch rounds)
- 1 can (14.5 oz) Diced tomatoes
- 4 cups Beef broth
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1.5 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 0.25 cup Fresh cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Add beef cubes and sear until browned on all sides. Remove beef and set aside.

Add chopped onions to the pot and cook until softened and golden brown, about 8-10 minutes. Add minced garlic and grated ginger and cook for another 1-2 minutes until fragrant.

Stir in turmeric, cumin, and coriander powders. Cook for 1 minute, stirring constantly.

Add the diced tomatoes, beef broth, and the seared beef back into the pot. Season with salt and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours, or until the beef is tender.

Add the potatoes and carrots to the pot. Cover and continue to simmer for another 30-40 minutes, or until the vegetables are tender.
