Okra and Beef Stew

A flavorful and comforting stew featuring tender beef and okra simmered in a rich tomato-based sauce, seasoned with Ugandan spices.

- 1.5 lbs Beef(stewing cuts like chuck or brisket, cut into 1-inch cubes)
- 3 tbsp Cooking oil
- 2 medium Onions(chopped)
- 5 cloves Garlic(minced)
- 4 medium Tomatoes(chopped or pureed)
- 1 medium Green bell pepper(chopped)
- 1 pound Okra(trimmed and sliced into 1-inch pieces)
- 2 cups Water or beef broth
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 1 tsp Royco or beef masala(optional, for added flavor)

Pat the beef dry with paper towels. Season with salt and pepper.

Heat cooking oil in a large pot or Dutch oven over medium-high heat. Brown the beef in batches, about 3-4 minutes per side. Remove beef and set aside.

Add minced garlic and chopped green bell pepper. Cook for another 2 minutes until fragrant.

Stir in the chopped or pureed tomatoes, turmeric, cumin, coriander, and optional Royco/beef masala. Cook for 5 minutes, stirring occasionally, until the tomatoes have broken down slightly.

Return the browned beef to the pot. Add water or beef broth, ensuring the meat is mostly submerged. Bring to a boil, then reduce heat, cover, and simmer for 1 hour, or until the beef is tender.
