Cowboy Caviar
A vibrant and fresh no-cook dip or salsa, sometimes called Texas Caviar, featuring a colorful medley of diced tomatoes, bell peppers, onions, jalapeños, avocado, corn, and black beans. It's tossed with cilantro, lime juice, a unique Italian dressing, garlic, and seasoned with salt, making it a perfect easy summer side dish or appetizer.

🧂 Ingredients
- Tomatoes(diced, as shown)
- Red bell pepper(diced, as shown)
- 1 medium Onion(finely chopped)
- 2 Jalapeño peppers(seeds scraped, finely chopped)
- 1 large Avocado(peeled, pitted, and diced)
- 1 cup Corn(canned or frozen, thawed)
- 1 can (15 oz) Black beans(rinsed and drained)
- Cilantro(finely chopped, to taste or as shown)
- Lime juice(from 1 lime, to taste or as shown)
- Light Italian dressing(to taste or as shown)
- Garlic(freshly minced, to taste or as shown)
- Salt(to taste)

Dice tomatoes, red bell pepper, and 1 medium onion. Add them to a large mixing bowl.

Take 2 jalapeño peppers, scrape out the seeds, and finely chop them. Add the chopped jalapeños to the bowl.

Peel, pit, and dice 1 large avocado. Carefully add the diced avocado to the bowl.

Add about 1 cup of corn (canned or thawed frozen) and 1 can (15 oz) of rinsed and drained black beans to the bowl.

Finely chop cilantro and add it to taste. Squeeze the juice from one lime over the ingredients.

Pour in some light Italian dressing and add freshly minced garlic to taste.

Season with salt to taste. Stir all the ingredients together until well combined.
