These grinder salad sandwiches are a quick and easy no-cook meal perfect for hot weather. Hoagie rolls are filled with ham, salami, pepperoni, and provolone, then topped with a creamy, seasoned lettuce and red onion salad, and sliced tomatoes.

- 4 Hoagie rolls
- Ham(to taste or as shown)
- Salami(to taste or as shown)
- Pepperoni(to taste or as shown)
- 8 slices Provolone cheese((2 slices per sandwich))
- 1/2 cup Mayonnaise
- 2 tablespoons Red wine vinegar
- Seasonings(salt, pepper, Italian seasoning, dried dill; to taste)
- Parmesan cheese(grated, to taste)
- Pepperoncini(sliced, to taste)
- 8 ounce bag Shredded iceberg lettuce
- 1/2 Red onion(thinly sliced)
- 4 Tomatoes(sliced and seasoned with salt and pepper)

Preheat your oven or broiler. Slice your hoagie rolls lengthwise and arrange them on a baking sheet. Layer slices of ham, salami, pepperoni, and provolone cheese onto the bottom halves of the rolls.

Place the baking sheet in the oven for a couple of minutes until the cheese is melted and bubbly.

While the sandwiches are heating, prepare the grinder salad. In a large bowl, combine the mayonnaise, red wine vinegar, salt, pepper, Italian seasoning, and dried dill. Mix well until combined.

Add some grated Parmesan cheese, sliced pepperoncini, shredded lettuce, and thinly sliced red onion to the dressing. Stir everything together until the vegetables are well coated.

Once the sandwiches are out of the oven, top the melted cheese and meat with sliced tomatoes seasoned with salt and pepper. Pile a generous amount of the prepared grinder salad on top of the tomatoes.

Sprinkle with a little extra grated Parmesan cheese, then close the sandwiches with the top halves of the hoagie rolls. Serve immediately.
