- 4 minced Garlic cloves
- 2 whole Bay leaves

- 2 tablespoons Fresh parsley(chopped)
- 1 teaspoon Salt(or to taste)

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Lightly season the chicken thighs with salt and sear them on both sides until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

Add the remaining 2 tablespoons of olive oil to the skillet. Sautรฉ the sliced onions and minced garlic until they become soft and fragrant, about 5 minutes.

Stir in the sliced carrots, paprika, cumin, bay leaves, and black peppercorns. Cook for another 2 minutes to toast the spices and coat the vegetables.

Add the vinegar and water to the skillet, then bring the mixture to a gentle simmer. Return the seared chicken thighs to the skillet, cover, and reduce the heat to low. Cook for 25-30 minutes or until the chicken is cooked through and tender.

Transfer the chicken and the escabeche marinade (including the vegetables) to a glass dish or container. Allow it to cool to room temperature, then cover and refrigerate for at least 4 hours or, ideally, overnight to let the flavors meld.
