Kalembula is a popular Zambian relish made from tender sweet potato leaves, simmered with groundnuts (peanuts) to create a rich, creamy, and flavorful dish. It is a nutritious and commonly served side dish, especially with nshima.

- 500 g Sweet potato leaves (Kalembula)(fresh, washed and chopped)
- 150 g Pounded groundnuts (peanut butter)(smooth or chunky)
- 2 medium Tomatoes(chopped)
- 1 medium Onion(chopped)
- 1.5 cups Water(or as needed)
- to taste Salt
- 1/4 tsp Bicarbonate of soda (optional)(helps to tenderize the leaves)
- 2 tbsp Cooking oil(optional, for sautรฉing)

Wash the sweet potato leaves thoroughly and chop them into bite-sized pieces.

In a pot, combine the chopped leaves, chopped tomatoes, chopped onion, water, salt, and optional bicarbonate of soda.

Bring the mixture to a boil, then reduce heat, cover, and simmer for about 10-15 minutes, or until the leaves are tender.

Stir in the pounded groundnuts (or peanut butter) until well combined and the sauce thickens.

Continue to simmer for another 10-15 minutes, stirring occasionally, until the relish is cooked through and the flavors have melded. Add a little more water if it becomes too thick.
