Muriwo wedovi Mutakura

- 2 medium Tomatoes(chopped)

- 1/2 cup Cowpeas
- 1/4 cup Peanuts

Prepare the mutakura: Rinse the maize, cowpeas, and peanuts. In a pot, combine them with 4 cups of water. Bring to a boil, then reduce heat, cover, and simmer for about 45-60 minutes, or until the grains and legumes are tender. Season with salt to taste. Keep warm.

While the mutakura is cooking, prepare the muriwo wedovi. In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sautรฉ until translucent, about 3-4 minutes.

Add the minced garlic and chopped tomatoes to the pot. Cook for another 3-4 minutes, until the tomatoes begin to break down.

Add the chopped collard greens or kale to the pot. Stir well to combine with the sautรฉed vegetables. Pour in 1 cup of water or vegetable broth and bring to a boil.

Reduce the heat to low. In a separate bowl, whisk the peanut butter with a little bit of the cooking liquid from the pot until smooth. Pour this peanut butter mixture into the pot with the greens.
