Pule me Mushketer dhe Salcë Koshi
A comforting dish featuring tender chicken cooked with mushrooms in a creamy yogurt sauce (koshi). This recipe showcases the popular use of yogurt in Albanian cuisine, offering a tangy and rich flavor profile.

🧂 Ingredients
- 600 g Chicken breasts or thighs(cut into bite-sized pieces)
- 2 tbsp Olive oil
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 250 g Mushrooms(sliced)
- 2 tbsp All-purpose flour
- 200 ml Chicken broth
- 300 g Plain yogurt (koshi)
- 2 tbsp Fresh dill(chopped)
- to taste Salt
- to taste Black pepper
👨🍳 Instructions
- 1
Season the chicken pieces with salt and pepper.
- 2
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned on all sides. Remove the chicken from the skillet and set aside.
- 3
Add the chopped onion to the skillet and sauté until softened, about 5 minutes. Add the minced garlic and sliced mushrooms and cook until the mushrooms are tender and have released their liquid, about 7-10 minutes.
- 4
Sprinkle the flour over the mushroom and onion mixture and stir well, cooking for 1 minute to form a roux.
- 5
Gradually whisk in the chicken broth until smooth. Bring to a simmer, stirring constantly, until the sauce begins to thicken.
- 6
Reduce the heat to low. In a separate bowl, whisk the yogurt until smooth. Gradually temper the yogurt by adding a few tablespoons of the warm sauce to it, whisking continuously. Then, pour the tempered yogurt mixture back into the skillet with the sauce.
- 7
Return the browned chicken to the skillet. Stir in the chopped dill. Cook gently for about 10-15 minutes, or until the chicken is cooked through and the sauce is heated through. Do not boil the sauce after adding the yogurt, as it may curdle.
- 8
Taste and adjust seasoning with salt and pepper. Serve hot, perhaps with rice or boiled potatoes.
💡 Pro Tips
- ✓Ensure the yogurt is at room temperature before tempering to prevent curdling.
- ✓If you prefer a thicker sauce, you can add a little more flour or let it simmer gently for a few extra minutes.
- ✓Using chicken thighs will result in a more moist and flavorful dish.
