Truita de Llonganissa i Bolets

- 200 g Llonganissa(casings removed, crumbled)
- 250 g Wild mushrooms(cleaned and sliced (e.g., porcini, chanterelles))
- 1/2 medium Onion(finely chopped)
- 2 cloves Garlic(minced)
- 6 large Eggs
- 2 tbsp Milk
- 2 tbsp Olive oil
- 2 tbsp Fresh parsley(chopped)

- 50 g Andorran cheese(grated (optional))

In a skillet, cook the crumbled llonganissa over medium heat until browned and cooked through. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Add the chopped onion and minced garlic to the skillet with the llonganissa fat. Sauté until the onion is softened and translucent.

Add the sliced wild mushrooms to the skillet and cook until they have released their liquid and are tender and lightly browned.
