Bahamian Okra Soup

- 1 large Bell Pepper(diced)

- 2 tbsp Tomato paste
- 1 tbsp Thyme(dried, or 2 tbsp fresh)
- 0.5 small Scotch Bonnet pepper(minced, optional for heat)
- 2 tsp Salt(or to taste)
- 1 tsp Black pepper(freshly ground, or to taste)
- 2 medium Potatoes(peeled and quartered (optional))
- 2 large Carrots(peeled and chopped (optional))
- 2 ears Corn on the cob(cut into pieces (optional))

In a large pot or Dutch oven, combine the beef, mutton, and turkey wings with 4 quarts of water. Bring to a boil, then reduce heat, cover, and simmer for about 1.5 to 2 hours, or until the meats are tender. Skim off any impurities that rise to the surface.

While the meat is simmering, heat the palm oil in a separate skillet over medium heat. Add the diced onions, bell pepper, celery, and minced garlic. Sautรฉ until softened, about 5-7 minutes.
