Matoke na Nyama ya Mbuzi
A hearty and flavorful dish featuring tender goat meat stewed with mashed plantains (matoke) in a rich, savory sauce. This dish is a staple in many Burundian households, often prepared for special occasions or family gatherings.

- 8 medium Green plantains(peeled and cut into chunks)
- 1 kg Goat meat(bone-in, cut into stewing pieces)
- 2 large Onions(chopped)
- 4 medium Tomatoes(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Vegetable oil
- 4 cups Water
- to taste Salt
- 1 tsp Black pepper(freshly ground)
- 1 tsp Coriander powder
- 1 tsp Cumin powder

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the goat meat on all sides. Remove meat and set aside.

Add the chopped onions to the pot and sautรฉ until softened and translucent, about 5-7 minutes.

Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

Add the chopped tomatoes, coriander powder, and cumin powder. Cook, stirring occasionally, until the tomatoes break down and form a sauce, about 10-15 minutes.

Return the browned goat meat to the pot. Add 4 cups of water, salt, and black pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 1 hour, or until the meat is tender.

Add the plantain chunks to the pot. Ensure they are mostly submerged in the liquid. Cover and continue to simmer for another 20-30 minutes, or until the plantains are tender and have started to break down, thickening the stew.

Mash some of the plantains against the side of the pot to further thicken the stew. Adjust seasoning with salt and pepper if needed. Serve hot.
