Poulet Sauce Graine
A rich and flavorful chicken stew made with palm nut cream (graine), onions, tomatoes, and spices. It's a beloved dish across Cameroon, often served with rice or fufu.

- 1.5 kg Chicken(cut into pieces)
- 800 g Palm nut cream (Graine)(canned or fresh)
- 2 medium Onions(chopped)
- 400 g Tomatoes(chopped or pureed)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 small Scotch bonnet pepper(optional, for heat)
- 2 tbsp Vegetable oil
- 500 ml Water
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(ground)
- 2 pieces Bay leaves

Season chicken pieces with salt, black pepper, and half of the minced garlic and ginger. Let marinate for at least 15 minutes.

In a large pot or Dutch oven, heat vegetable oil over medium heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

Add chopped onions to the pot and sautรฉ until softened, about 5-7 minutes.

Add the remaining garlic, ginger, and scotch bonnet pepper (if using). Cook for another minute until fragrant.

Stir in the chopped or pureed tomatoes. Cook for about 10 minutes, stirring occasionally, until the tomato mixture has thickened and darkened.

Add the palm nut cream (graine) and water to the pot. Stir well to combine with the tomato mixture.
