Lomo a la Olla con Puré de Papas

- 2 large Onions(chopped)
- 3 medium Carrots(peeled and roughly chopped)
- 2 Celery stalks(roughly chopped)
- 4 Garlic cloves(minced)
- 1 liter Beef broth
- 250 ml Red wine
- 2 Bay leaves
- 3 Thyme sprigs
