  • 1.5 tsp Salt(or to taste)
  • 1 tsp Black pepper(freshly ground, or to taste)
  • 2 medium Carrots(peeled and roughly chopped)
  • 1 medium Yellow onion(peeled and roughly chopped)
  • 3 cloves Garlic(minced)
  • 2 tbsp All-purpose flour
  • 1 tbsp Tomato paste
  • 750 ml Red Burgundy wine(a dry Pinot Noir or other good quality dry red wine)
  • 500 ml Beef stock(low sodium preferred)
  • 4-5 sprigs Fresh thyme sprigs
  • 1 leaf Bay leaf
  • 450 g Pearl onions(peeled (blanching in boiling water for 30 seconds makes peeling easier))
  • 450 g Cremini mushrooms(cleaned and halved or quartered if large)
  • 2 tbsp Butter(divided, for sautéing onions and mushrooms)
  • 2 tbsp Parsley(freshly chopped, for garnish)
