Gambian Chicken and Peanut Stew

A rich and flavorful chicken stew, known as Chu Ganarr in Wolof, this dish is a comforting staple in Gambian cuisine. It features tender chicken simmered in a savory sauce made with tomatoes, onions, garlic, and a hint of spice, often served with white rice.

- 1 kg Chicken(cut into pieces, bone-in or boneless)
- 2 large Onions(chopped)
- 5 cloves Garlic(minced)
- 3 medium Tomatoes(chopped)
- 2 tbsp Tomato paste
- 1 small Habanero pepper(finely chopped, or to taste)
- 0.25 cup Vegetable oil
- 1 cube Chicken bouillon cube(or 1 tsp salt)
- 1 tsp Black pepper
- 1 tsp Salt(or to taste)
- 1 cup Water(or chicken broth)
- 1 cup Mixed vegetables(e.g., carrots, bell peppers, cabbage, optional)
- 0.5 cup Macaroni(optional)

Season the chicken pieces with salt, black pepper, and optional bouillon cube. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides, then set aside.

In the same pot, add the chopped onions and sautรฉ until softened and translucent, about 5-7 minutes.

Add the minced garlic, chopped tomatoes, tomato paste, and chopped habanero pepper. Stir well and cook for about 10 minutes, stirring occasionally, until the tomatoes have broken down and the mixture thickens.

Return the browned chicken to the pot. Add the water (or chicken broth) and the remaining bouillon cube (if using salt, add it here). Stir to combine.

Bring the stew to a boil, then reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.
