Gambian Lamb and Couscous Stew
A fragrant and warming lamb stew, slow-cooked with aromatic spices and tender vegetables, served over fluffy couscous. This dish offers a delightful blend of savory and slightly sweet flavors.

- 1 kg Lamb shoulder or leg(cut into 1.5-inch cubes)
- 2 large Onions(chopped)
- 5 cloves Garlic cloves(minced)
- 2 medium Carrots(peeled and chopped)
- 1 large Sweet potatoes(peeled and cubed)
- 1 can (400g) Canned chopped tomatoes
- 3 cups Chicken broth
- 2 tablespoons Tomato paste
- 1.5 teaspoons Ground cumin
- 1 teaspoon Ground coriander
- 1 teaspoon Turmeric powder
- 0.5 teaspoon Cinnamon
- 0.25 teaspoon Cayenne pepper(or to taste)
- 1 teaspoon Salt(or to taste)
- 0.5 teaspoon Black pepper(freshly ground, or to taste)
- 2 tablespoons Vegetable oil
- 0.5 cup Dried apricots(chopped)
- 2 cups Couscous(prepared according to package directions)
- 0.25 cup Fresh parsley(chopped, for garnish)

Season the lamb cubes generously with salt and black pepper.

Heat vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the lamb in batches, ensuring not to overcrowd the pot. Remove the browned lamb and set aside.

Add the chopped onions to the pot and sautรฉ until softened and lightly golden, about 7-10 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the tomato paste, ground cumin, ground coriander, turmeric powder, cinnamon, and cayenne pepper. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.
