Chicken and Bean Stew
Nyamitoubab is a hearty and flavorful Gambian stew that combines tender chicken with nutrient-rich beans in a savory sauce. This dish is a comforting staple, often enjoyed with rice.

- 500 g Chicken thighs(bone-in, skin-on, cut into pieces)
- 2 tbsp Olive oil
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 2 tbsp Tomato paste
- 1 can (400g) Canned diced tomatoes(undrained)
- 1 can (400g) Kidney beans(rinsed and drained)
- 2 cups Chicken broth
- 1 medium Bell pepper(chopped (any color))
- 1 small Scotch bonnet pepper(finely chopped (optional, for heat))
- 1 tsp All-purpose seasoning
- 0.5 tsp Black pepper
- 1 tsp Salt(or to taste)
- 1 Bay leaf

Season the chicken pieces with all-purpose seasoning, black pepper, and salt.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken from the pot and set aside.
