- 1 kg Potatoes(peeled and cut into wedges)
- 2 large Lemons(one sliced, one juiced)
- 150 ml Olive oil
- 4 cloves Garlic cloves(thinly sliced)
- 2 tbsp Fresh oregano(chopped)
- 2 tbsp Fresh parsley(chopped)
- 1 tsp Salt
- 0.5 tsp Black pepper
- 100 ml Water

Preheat your oven to 200ยฐC (400ยฐF).

In a large bowl, toss the potato wedges with half of the olive oil, salt, pepper, and half of the garlic and herbs. Spread them in a single layer in a large baking dish.

Make a few shallow slashes on both sides of the fish. Season the fish inside and out with salt and pepper. Stuff the cavity with some lemon slices and a few garlic slices.

Place the fish on top of the potatoes in the baking dish. Drizzle the remaining olive oil over the fish and potatoes. Add the remaining garlic and herbs.

Pour the lemon juice and water into the baking dish. Arrange the remaining lemon slices over and around the fish.

Bake for 40-50 minutes, or until the fish is cooked through and flakes easily with a fork, and the potatoes are tender and golden brown. Baste the fish and potatoes with the pan juices halfway through baking.
