Pollo en Curtido

- 1 medium Bell pepper(thinly sliced (any color))
- 4 cloves Garlic(minced)
- 1 tsp Achiote powder (annatto)
- 1 tsp Oregano

In a large bowl, combine the chicken pieces with minced garlic, achiote powder, oregano, salt, and pepper. Mix well to coat the chicken. Let it marinate for at least 15 minutes.
