Italian Sausage and Lentils

- 1 stalk Celery(Finely diced.)
- 1 Onion(Medium, finely diced.)
- 2 cloves Garlic(Minced.)
- 2 tbsp Tomato paste
- 4 cups Chicken or vegetable broth(Low sodium preferred.)
- 1 Bay leaf(Dried.)
- 1 tbsp Olive oil

In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the Italian sausages and cook, breaking them up with a spoon, until browned and cooked through, about 8-10 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add the diced onion, carrots, and celery to the pot. Sautรฉ until the vegetables begin to soften and the onion is translucent, about 5-7 minutes. Stir in the minced garlic and tomato paste, cooking for another minute until fragrant.
