- 3 medium Carrots(peeled and roughly chopped)
- 2 medium Bell peppers (mixed colors)(seeded and chopped)
- 400 g Tomatoes(canned, crushed)
- 500 ml Beef or lamb broth
- 3 tbsp Olive oil
- 2 tsp Paprika
- 1 tsp Dried thyme
- 1 Bay leaf

- 2 tbsp Fresh parsley(chopped, for garnish)
