Vegetable and Rice Stuffed Peppers

- 4 large Bell peppers(any color, tops cut off and seeds removed)
- 1 cup Rice(uncooked, rinsed)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 medium Zucchini(diced)
- 2 medium Carrots(diced)
- 2 medium Tomatoes(diced)
- 2 tbsp Tomato paste
- 1.5 cups Vegetable broth
- 3 tbsp Fresh parsley(chopped)
- 1 tbsp Fresh mint(chopped (optional))
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(or to taste)
- 3 tbsp Olive oil

Preheat oven to 190°C (375°F). Lightly grease a baking dish.

In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes.

Add minced garlic, diced zucchini, and diced carrots. Cook for another 5-7 minutes until vegetables are tender-crisp.

Stir in the diced tomatoes, tomato paste, rinsed rice, chopped parsley, chopped mint (if using), salt, and pepper. Cook for 2 minutes, stirring constantly.

Pour in the vegetable broth and bring the mixture to a simmer. Cook for about 5 minutes, or until the liquid is mostly absorbed and the rice is partially cooked.

Carefully spoon the rice and vegetable mixture into the prepared bell peppers, filling them generously.

Place the stuffed peppers upright in the baking dish. Pour any remaining vegetable broth into the bottom of the dish.
