Luxembourgish Chicken in Riesling Sauce

- 800 g Chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 250 g Mushrooms(sliced)
- 2 Shallots(finely chopped)
- 2 tbsp Butter
- 2 tbsp Flour
- 200 ml Riesling wine(dry)
- 250 ml Chicken broth
- 150 ml Heavy cream
- 1 tbsp Lemon juice
- 2 tbsp Fresh parsley(chopped)

Season the chicken pieces with salt and white pepper. In a large skillet or Dutch oven, melt the butter over medium-high heat. Sear the chicken pieces until lightly browned on all sides. Remove chicken and set aside.

Add the sliced mushrooms to the same skillet. Cook until they release their liquid and start to brown. Add the chopped shallots and cook until softened, about 2-3 minutes.

Sprinkle the flour over the mushrooms and shallots. Stir and cook for 1 minute to create a roux.

Gradually whisk in the Riesling wine, scraping up any browned bits from the bottom of the pan. Let it simmer for a minute.

Pour in the chicken broth and bring the sauce to a simmer. Return the seared chicken to the skillet.

Reduce the heat to low, cover, and simmer for about 30 minutes, or until the chicken is cooked through and tender.
