Luxembourgish Game Stew
A rich and hearty game stew, typical of Luxembourg's Ardennes region, featuring tender chunks of game meat slow-cooked with root vegetables, red wine, and a hint of gingerbread for depth.

- 1 kg Game meat (venison, wild boar, or rabbit)(cut into 4cm chunks)
- 100 g Smoked streaky bacon(rolled up)
- 25 g Butter
- 8 pieces Small onions or shallots(trimmed and peeled)
- 2 cloves Garlic(minced)
- 2 sprigs Fresh thyme
- 1 Bay leaf
- 6 Juniper berries(roughly crushed)

- 1 tsp Salt
- 0.5 tsp Black pepper
- 200 ml Full-bodied red wine
- 400 ml Chicken or game stock
- 75 g Redcurrant jelly
- 2 Carrots(cut into 1cm chunks)
- 200 g Mushrooms(sliced)
- 1 slice Gingerbread cake(crumbled)
- 1 tsp Mustard(coarse)
