  • 3 tbsp Olive oil
  • 2 large Onions(roughly chopped)
  • 4 medium Carrots(chopped)
  • 4 cloves Garlic(minced)
  • 250 g Prunes(pitted)
  • 800 ml Lamb stock
  • 200 ml Red wine
  • 2 Cinnamon sticks
  • 2 Bay leaves
  • 1 tsp Ground ginger
  • to taste Salt
  • to taste Black pepper
  • for garnish Fresh parsley
