Myanmar Sweet and Sour Pork with Pineapple and Peppers

- 400 g Pork shoulder(cut into bite-sized pieces)
- 2 tbsp Cornstarch(for coating pork)
- 1 tbsp Soy sauce(for marinating pork)
- 3 cloves Garlic(minced)
- 1 inch piece Ginger(minced)
- 1 medium Onion(cut into wedges)
- 1 medium Bell pepper(any color, cut into chunks)
- 1 cup Pineapple chunks(fresh or canned)
- 3 tbsp Vegetable oil(divided)
- 4 tbsp Ketchup
- 2 tbsp Rice vinegar
- 2 tbsp Sugar
- 3 tbsp Water
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)

In a bowl, toss the pork pieces with cornstarch and soy sauce. Let it marinate for at least 10 minutes.

In a small bowl, whisk together ketchup, rice vinegar, sugar, and water to make the sauce. Set aside.

Heat 2 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated pork and stir-fry until browned and cooked through. Remove pork from the wok and set aside.
