Mopane Worms Stew
A protein-rich and traditional Namibian dish made from mopane caterpillars, simmered with tomatoes, onions, and spices.

- 200 g Dried Mopane worms
- 2 tbsp Vegetable oil
- 1 large Onion(finely chopped)
- 2 cloves Garlic(minced)
- 2 medium Tomatoes(diced)
- 1 tsp Chili powder(optional, or to taste)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 1 cup Water(for rehydrating and simmering)

Rehydrate the dried mopane worms by soaking them in warm water for about 30 minutes. Drain thoroughly and set aside.

Heat the vegetable oil in a large pan or pot over medium heat. Add the chopped onion and sautรฉ until translucent, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the diced tomatoes and chili powder (if using). Cook, stirring occasionally, until the tomatoes soften and break down, about 5-7 minutes.

Add the rehydrated mopane worms to the pan. Stir well to combine with the tomato and onion mixture.

Pour in about 1 cup of water, or enough to partially cover the worms. Season with salt and black pepper. Bring to a simmer, then reduce the heat to low, cover, and cook for at least 20-30 minutes, or until the mopane worms are tender and the flavors have melded.

Adjust seasoning if necessary. Serve hot as a main dish or a side dish with pap (maize porridge), rice, or bread.
