Vegetable Thukpa
A hearty and flavorful Tibetan-style noodle soup, popular in Nepal, packed with mixed vegetables and aromatic spices. This vegetarian version is warming and satisfying.

- 1 inch Ginger(grated)
- 1 medium Onion(chopped)
- 2 medium Carrots(julienned)
- 1 medium Bell pepper(any color, julienned)
- 1 cup Cabbage(shredded)
- 1 cup Broccoli florets
- 1 cup Mushrooms(sliced)
- 6 cups Vegetable broth
- 2 tbsp Soy sauce
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/4 tsp Chili flakes(or to taste)

- 200 g Noodles(thick wheat noodles or ramen noodles)
- 2 stalks Green onions(chopped, for garnish)
- 2 tbsp Cilantro(chopped, for garnish)

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add minced garlic and grated ginger, sautรฉing until fragrant, about 1 minute.

Add chopped onion and cook until softened, about 5 minutes.

Add julienned carrots and bell pepper, sautรฉing for another 3-4 minutes until slightly tender.

Stir in shredded cabbage, broccoli florets, and sliced mushrooms. Cook for 5 minutes until vegetables begin to wilt.

Pour in vegetable broth. Add soy sauce, turmeric powder, cumin powder, coriander powder, chili flakes, and salt to taste. Bring the soup to a boil.
