- 300 g Smoked pork ribs or bacon(cut into pieces)
- 2 medium Carrots(diced)
- 1 medium Parsnips(diced)
- 1/2 medium Celery root(diced)
- 2 medium Potatoes(diced)
- 1 medium Leek(sliced)
- 1 medium Bell pepper(diced (any color))
- 2 medium Tomatoes(chopped)
- 1 tbsp Tomato paste
- 2 liters Water or vegetable broth
- 1/4 cup Fresh tarragon(chopped)
- to taste Salt
- to taste Black pepper
- 1 Bay leaf
- for serving Sour cream
- for garnish Fresh parsley

In a large pot, combine the smoked pork or bacon with enough water to cover. Bring to a boil and simmer for 15-20 minutes to render some fat and remove excess salt. Drain and set aside the meat.

In the same pot, add the diced carrots, parsnips, celery root, and leek. Sauté for about 5-7 minutes until slightly softened.

Add the diced potatoes and bell pepper to the pot. Stir in the tomato paste and cook for 1 minute.

Return the smoked meat to the pot. Pour in the water or vegetable broth. Add the chopped tomatoes, bay leaf, salt, and pepper.

Bring the soup to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, or until all vegetables are tender and the flavors have melded. Skim off any excess fat if desired.

Stir in the chopped fresh tarragon during the last 5 minutes of cooking.
