St. Kitts Spiced Fish and Plantain Bake
A flavorful and satisfying bake featuring flaky white fish seasoned with Caribbean spices, layered with sweet, ripe plantains, and baked to golden perfection.

🧂 Ingredients
- 600 g White fish fillets(such as snapper, mahi-mahi, or tilapia, cut into chunks)
- 3 medium Ripe plantains(peeled and sliced into 1/2-inch rounds)
- 1 medium Onion(thinly sliced)
- 3 cloves Garlic(minced)
- 1 small Bell pepper(finely chopped (any color))
- 2 medium Tomatoes(chopped)
- 1 tbsp All-purpose seasoning
- 1 tsp Curry powder
- 0.5 tsp Turmeric powder
- 1 tsp Thyme(dried or fresh leaves)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)
- 2 tbsp Lime juice
- 2 tbsp Vegetable oil
- 2 tbsp Chopped fresh parsley or cilantro(for garnish)

Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

In a bowl, combine the fish chunks with lime juice, salt, black pepper, all-purpose seasoning, curry powder, turmeric, and thyme. Toss gently to coat. Let it marinate for 10-15 minutes.

In a separate bowl, toss the sliced plantains with 1 tbsp of vegetable oil, a pinch of salt, and pepper.

Heat the remaining 1 tbsp of vegetable oil in a skillet over medium heat. Sauté the sliced onion until softened, about 5 minutes. Add minced garlic and chopped bell pepper, cook for another 2 minutes until fragrant.

Stir in the chopped tomatoes and cook for 3-4 minutes until they begin to break down. Remove from heat.

Arrange half of the seasoned plantain slices in the bottom of the prepared baking dish. Top with the sautéed onion and tomato mixture.

Layer the marinated fish chunks evenly over the vegetable mixture.

Top the fish with the remaining plantain slices. Cover the baking dish tightly with foil.

Bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the fish is cooked through and flakes easily, and the plantains are tender and lightly golden.
