Madongo Dumplings
These unique, gluten-free dumplings are a specialty of Saint Vincent and the Grenadines, made from native arrowroot flour, combined with coconut and fragrant spices like nutmeg. They are typically fried until golden and crispy, offering a delightful texture and subtly sweet flavor.

๐ง Ingredients
- 2 cups Arrowroot flour
- 1/2 cup Shredded coconut
- 1 tsp Ground nutmeg
- 1/2 tsp Ground cinnamon
- 1/4 tsp Salt
- 2 tbsp Sugar
- approx. 1/2 to 3/4 cup Water(as needed to form dough)
- for frying Vegetable oil
๐จโ๐ณ Instructions
- 1
In a medium bowl, combine the arrowroot flour, shredded coconut, nutmeg, cinnamon, salt, and sugar. Mix well to distribute the ingredients evenly.
- 2
Gradually add water, a little at a time, mixing until a firm but pliable dough forms. You may not need all the water, or you might need slightly more, depending on the humidity and the arrowroot flour.
- 3
Knead the dough lightly for a minute or two until it's smooth and well combined.
- 4
Shape the dough into small balls, about 1 to 1.5 inches in diameter. You can also flatten them slightly if preferred.
- 5
Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven over medium-high heat until it reaches about 350ยฐF (175ยฐC). You can test the oil by dropping a tiny piece of dough; it should sizzle immediately.
- 6
Carefully add the dumplings to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 3-5 minutes, turning occasionally, until they are golden brown and cooked through.
- 7
Remove the fried dumplings with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
- 8
Serve warm as a snack or a side dish.
๐ก Pro Tips
- โEnsure the arrowroot flour is fresh for the best texture.
- โDo not overwork the dough, as this can make the dumplings tough.
- โMaintain a consistent oil temperature for even cooking and to prevent the dumplings from becoming greasy.
