Senegalese Fish and Peanut Stew

- 500 g Firm white fish fillets(such as mackerel, tilapia, or snapper, cut into chunks)
- 6 tablespoons Peanut butter(natural, unsweetened)
- 2 tablespoons Tomato paste
- 2 medium Onions(finely chopped)
- 3 cloves Garlic cloves(minced)
- 1 medium Yellow bell pepper(chopped)
- 1 medium Sweet potato(peeled and cut into 1-inch cubes)
- 4 leaves Savoy cabbage(cut into large pieces)
- 400 ml Water
- 2 tablespoons Vegetable oil
- 0.5 teaspoon Chili flakes(or to taste)
- 1 teaspoon Mixed herbs
- Salt(to taste)
- 400 g White rice(for serving)

In a jug, whisk together the peanut butter and 400ml of water until smooth. Set aside.

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the chopped onions and sauté until softened, about 5-7 minutes.
