Mafeh Fish Stew
A variation of the popular groundnut stew, this version features fish as the primary protein, simmered in a rich, savory peanut and tomato base. It's aromatic and deeply satisfying, often served with rice.

- 400 g Firm White Fish Fillets(such as tilapia, cod, or snapper, cut into chunks)
- 200 ml Peanut Butter(smooth, unsweetened)
- 400 g Tomatoes(chopped, or 1 can (400g) crushed tomatoes)
- 1 large Onions(chopped)
- 2 cloves Garlic(minced)
- 1/2 inch piece Ginger(grated)
- 1 tbsp Vegetable Oil
- 400 ml Water or Fish Broth(or as needed)

- 2 tbsp Coriander(fresh, chopped, for garnish (optional))

Heat vegetable oil in a pot over medium heat. Sautรฉ chopped onions until softened, about 5 minutes.
