Idrija Vegetable Rolls

- For the Dough:
- 250 g All-purpose flour
- 1 large Egg
- approx. 100 ml Water(lukewarm)
- 1/2 tsp Salt
- For the Filling:
- 300 g Mixed seasonal vegetables(e.g., carrots, celery, leeks, peas, finely chopped)
- 1 small Onion(finely chopped)
- 1 clove Garlic(minced)
- 2 tbsp Vegetable oil or butter
- 2 tbsp Fresh parsley(chopped)

Cook the štruklji: Bring a large pot of salted water to a boil. Gently place the štruklji into the boiling water. Reduce heat to a simmer and cook for about 15-20 minutes, or until they float and are cooked through. Alternatively, they can be steamed.
