Solomon Islands Taro Leaf and Pork Stew

- 750 g Pork shoulder(cut into 2-inch cubes)
- 1 kg Taro leaves(washed, tough stems removed, and roughly chopped)
- 400 ml Coconut milk(full fat)
- 1 large Onion(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 1 small Chili pepper(finely chopped (optional, adjust to taste))
- 250 ml Water or vegetable broth
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground)

Heat cooking oil in a large pot or Dutch oven over medium-high heat. Brown the pork cubes on all sides.
