Surinamese Chicken with Black Soy Sauce
A flavorful and tender chicken dish marinated and cooked in a rich black soy sauce, infused with typical Surinamese spices. This dish is a versatile accompaniment to rice, noodles, or other Surinamese staples.

- 2.5 kg Chicken legs(chopped into 3-4 pieces, cleaned and washed with vinegar or lemon)
- 2 tbsp Sugar
- 1 large Onion(sliced into thin half-moons)
- 1 cup Cooking oil
- 6 cloves Garlic(chopped)
- 1 Chicken bouillon cube
- 2 Bay leaves
- 6 Allspice berries
- 1 cup Black Sweet and Salty Soy Sauce
- 1 cup Hot water
- 1 tbsp Laos powder (galangal)
- 1 tbsp Kentjoer powder (turmeric root)
- 1 tsp Black pepper
- 1 tsp Ajinomotto (MSG)(optional)
- Salt(to taste)
- 3 Celery stalks(chopped)

Prepare the chicken: Chop the chicken thighs into 3 or 4 pieces. Thoroughly clean the chicken and wash it with vinegar or lemon juice.

Cooking the chicken: Heat cooking oil and sugar in a pan. Slice the onion into thin half-moons and add it to the pan. Once the sugar is caramelized, add the onion, bay leaves, allspice berries, chopped garlic, and chicken bouillon cube. Let the onions fry until lightly browned.

Add a dash of black sweet and salty soy sauce and all the spices (laos powder, kentjoer powder, black pepper, and ajinomotto). Mix everything together well and add 1 cup of hot water. Add the chicken pieces and salt to taste.

Turn the heat to medium-high and cook the chicken with the lid on the pan for 10-15 minutes, stirring regularly to prevent burning at the bottom. After 15 minutes, add the chopped celery, mix well, and cook the chicken until done over low heat.

Bake/grill the chicken: Preheat the oven to 180 degrees Celsius (350ยฐF). Transfer the chicken to an oven dish and bake or grill for 7-8 minutes.
