Chekdirme
Stewed Lamb
Chekdirme is a traditional Turkmen dish featuring tender stewed lamb, often prepared with a medley of vegetables like onions, tomatoes, and potatoes. The slow cooking process allows the flavors to meld, creating a rich and comforting broth.

- 1 kg Lamb shoulder(cut into 2-inch pieces)
- 4 tbsp Lamb fat or vegetable oil
- 2 large Onions(finely chopped)
- 4 medium Tomatoes(halved or quartered)
- 500 g Potatoes(peeled and cut into large chunks)
- 1.5 tsp Salt
- 1 tsp Black pepper
- 500 ml Water or lamb broth
- 2 tbsp Fresh herbs (dill, parsley)(chopped, for garnish)

In a large pot or Dutch oven, heat the lamb fat or oil over medium-high heat. Add the lamb pieces and fry until golden brown on all sides.

Add the chopped onions to the pot and sautรฉ until softened and translucent, about 5-7 minutes.

Add the tomatoes and potatoes to the pot. Stir well to combine with the lamb and onions.

Season with salt and black pepper. Pour in the water or lamb broth, ensuring the liquid almost covers the ingredients.

Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly, and simmer for at least 1 hour and 15 minutes, or until the lamb is very tender and the vegetables are cooked through. Stir occasionally.
