Venezuelan Fish Soup

- 500g Firm white fish fillets(Such as snapper, sea bass, or cod. Cut into 2-inch pieces.)
- 3 Medium tomatoes(Ripe, diced.)
- 3 Medium potatoes(Peeled and cut into 1-inch cubes.)
- 1 bunch Fresh cilantro(Chopped, for garnish and flavor.)
- 1.5 liters Vegetable or fish broth(Low sodium is recommended.)
- 1 medium Onion(Finely chopped.)
- 2 Garlic cloves(Minced.)
- 2 tablespoons Olive oil

Prepare the sofrito: Heat the olive oil in a large pot or Dutch oven over medium heat (180ยฐC / 350ยฐF). Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.

Add the diced tomatoes to the pot. Cook, stirring occasionally, until the tomatoes begin to break down and release their juices, about 5 minutes. This forms the flavor base of the soup.
