- 6 medium Ripe tomatoes(peeled, seeded, and chopped (or 1 (28-oz) can diced tomatoes))
- 2 medium Yellow onions(thinly sliced)
- 0.25 cup Chicken broth(reduced-sodium)
- 1 tablespoon Peanut oil
- 2 teaspoons Soy sauce(reduced-sodium or tamari)
- 2 whole Habanero chiles(pierced with a fork)
- 1 cube Maggi or chicken bouillon cube(crushed)
- 1 teaspoon Smoked paprika(increase to 1.5 tsp if using rotisserie or BBQ chicken)

If using a whole smoked chicken, cut it into 4 serving pieces, discarding the backbone. If using pre-cooked chicken, shred it into large pieces.

Heat peanut oil in a large saucepan or Dutch oven over medium-low heat. Add the sliced onions and sauté for 5-7 minutes, until softened.

Add the crushed bouillon cube and smoked paprika to the onions, stirring to incorporate the spices. Crush the bouillon cube with your stirring utensil.
