Bulgarian Lamb and Vegetable Stew

A flavorful and tender lamb stew baked with a medley of vegetables like peppers, onions, and tomatoes, seasoned with fresh herbs. This dish is often prepared in a traditional clay pot (gyuvech) for a rustic and deeply satisfying meal.

- 1 kg Lamb shoulder or leg(cut into 4 cm cubes)
- 4 medium Potatoes(peeled and quartered)
- 2 large Bell peppers(mixed colors, seeded and cut into strips)
- 2 large Yellow onions(quartered)
- 400 g Tomatoes(chopped)
- 4 cloves Garlic(minced)
- 3 tbsp Olive oil
- 1 cup Beef or vegetable broth
- 0.5 cup Red wine (optional)
- 1 tbsp Paprika
- 1 tsp Dried mint
- to taste Salt and black pepper
- 0.25 cup Fresh parsley(chopped, for garnish)

Preheat oven to 350°F (175°C).

In a large bowl, toss the lamb cubes with olive oil, paprika, dried mint, salt, and pepper. Ensure the lamb is evenly coated.

In a large oven-safe pot or Dutch oven (or a traditional gyuvech pot), layer the ingredients: start with the quartered onions and minced garlic, followed by the seasoned lamb. Add the chopped bell peppers, quartered potatoes, and chopped tomatoes.

Pour the beef or vegetable broth and red wine (if using) over the ingredients. The liquid should come about halfway up the ingredients.
