Dalmatian Lamb Stew

- 1.2 kg Boneless lamb shoulder or leg(cut into large chunks)
- 3 tbsp Olive oil
- 2 large Onions(thinly sliced)
- 4 cloves Garlic cloves(minced)
- 1 large Red bell pepper(seeded and cut into strips)
- 1 large Green bell pepper(seeded and cut into strips)
- 4 medium Potatoes(peeled and cut into 1-2 cm cubes)
- 400 g Plum tomatoes(chopped)
- 250 ml Dry white wine
- 2 tsp Paprika
- 0.5 tsp Thyme(dried)
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 3 cups Water

Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the sliced onions and sauté until softened and translucent, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the lamb chunks to the pot and brown them on all sides. This may need to be done in batches to avoid overcrowding the pot.

Stir in the paprika and dried thyme, cooking for about 30 seconds until fragrant.

Pour in the dry white wine and scrape the bottom of the pot to loosen any browned bits. Let it simmer for 2-3 minutes until the alcohol has mostly evaporated.

Add the chopped tomatoes, cubed potatoes, and water. Season with salt and pepper. Stir everything to combine.

Bring the stew to a boil, then reduce the heat to low, cover the pot tightly, and simmer for 1 hour and 30 minutes, or until the lamb is tender and the potatoes are cooked through. Stir occasionally.
