  • 1 tsp Chili powder
  • 2 tbsp Vegetable oil
  • 1 bunch Spring onions(roughly chopped)
  • 2 medium Large onions(roughly chopped)
  • 3 medium Fresh tomatoes(roughly chopped)
  • 6 cloves Garlic cloves(minced)
  • 3 tbsp Tomato paste
  • 3 cubes Chicken stock cubes(crumbled)
  • 1 lb Sweet potatoes(peeled and cubed)
  • 2 medium Eggplants(peeled and cubed)
  • 4 cups Water
  • 3 leaves Bay leaves
  • 1 optional Scotch bonnet pepper(whole, for heat)
