Irish Bread and Butter Pudding
A comforting and simple dessert made from layers of buttered bread, soaked in a rich custard of eggs, milk, and cream, often enhanced with raisins and a hint of Irish whiskey.

๐ง Ingredients
- 12 slices White bread(stale or lightly toasted, crusts removed)
- 6 tbsp Butter(softened)
- 1 cup Golden raisins or sultanas
- 1 tsp Nutmeg(freshly grated)
- 1/2 tsp Cinnamon
- 4 count Large eggs
- 3/4 cup Granulated sugar
- 1 tsp Vanilla extract
- 1 cup Milk
- 1 pint Heavy cream
- 2 tbsp Irish whiskey(optional)
๐จโ๐ณ Instructions
- 1
Preheat oven to 350ยฐF (180ยฐC). Lightly grease a 2-quart baking dish.
๐ก Tip: A bain-marie (water bath) is recommended for even cooking. - 2
Butter one side of each slice of bread. Arrange four slices, buttered-side down, in the bottom of the prepared dish. Sprinkle with half the raisins, nutmeg, and cinnamon.
- 3
Layer with another four slices of bread, buttered-side down, and sprinkle with the remaining raisins, nutmeg, and cinnamon. Top with the final four slices of bread, buttered-side down.
- 4
In a bowl, whisk together the eggs, granulated sugar, vanilla extract, milk, and heavy cream until well combined. If using, stir in the Irish whiskey.
- 5
Pour the egg mixture slowly and evenly over the bread, ensuring all pieces are soaked. Gently press down on the bread to help it absorb the liquid. Let stand for at least 30 minutes (or up to overnight in the refrigerator) to allow the bread to soak.
- 6
Place the baking dish in a larger roasting pan. Carefully pour hot water into the roasting pan to come halfway up the sides of the baking dish. Bake for 45-60 minutes, or until the pudding is puffed, golden brown, and set in the center.
- 7
Let cool slightly before serving warm. It can be served with whipped cream or a drizzle of caramel sauce.
๐ก Pro Tips
- โUsing slightly stale bread helps it absorb the custard without becoming too mushy.
- โDon't skip the soaking time; it's crucial for the pudding's texture.
- โA splash of Irish whiskey adds a lovely depth of flavor, but it can be omitted for an alcohol-free version.
